1 cup raw rice = 3 cups cooked rice
1 1/2 cups corn
Sprinkle of cumin & chili powder
1/2 lettuce head
3/4 cup salsa
Sriracha mayo or chipotle mayo
60g cheddar cheese
1 1/2 avocados
Simple as that! Healthy fats, high protein, good carbs! This is a high calorie meal - if you are looking for lower I suggest doing less rice + extra lettuce & cutting back on as much cheese or using low fat cheese!
