Kale Caesar Salad with Roasted Yams

Why have any other kind of salad when you could have this salad? When you make salads with love and effort and textures and GOOD flavor it doesn't even feel like a salad anymore. Highly recommend trying this one and adding it to your weekly staples.

Kale Caesar Salad with Roasted Yams


Serves 2 30 minutes

  • 120g kale, 1 tbsp olive oil, 1 tbsp lemon juice, massaged

  • 240g chicken, sautéed (any of your favorite seasoning)

  • 200g yams, roasted

  • 2 slices sourdough, cubed

  • 1 - 2tbsp Caesar salad dressing, I use Renee’s and add garlic, lemon juice and worcestershire (mommas secret)

  • 30g parmesan

  1. Preheat oven to 400 degrees.

  2. To massage kale: combine kale, lemon juice and olive oil. And massage in your hands until the texture is soft and the kale is no longer crunchy.

  3. Dice yams and sourdough bread, toss yams in olive oil and salt and pepper and bake for 30 minutes. When those are 5 minutes away from being done, toss the sourdough in olive oil and salt and pepper and bake for 5 minutes.

  4. Chicken: Toss with olive oil and whichever seasoning you prefer, and saute until cooked through.

  5. Dressing: You can make your own dressing or buy dressing, I personally love to follow in my moms footsteps and buy Renee's Caesar dressing and add garlic, lemon juice and worcestershire to it for extra flavor.

  6. Toss everything up together and top with shaved parmesan
