Pizza Stuffed Chicken

INGREDIENTS

  • 2 chicken breasts

  • 2 tbsp tomato sauce

  • 16 pepperoni slices

  • ¼ cup mozzarella

  • ¼ - ½ cup fresh basil

  • Pineapple, couple slices (optional)

  • Olive oil, 1 tbsp

  • Salt & pepper, to taste

  • Paprika, sprinkle

  • Oregano, sprinkle


  • Penne pasta noodles, 3 servings


  • Vodka, 1-2 tbsp

  • Tomato sauce, 1 ½ cups

  • Half & half cream, ¼ cup

  • Parmesan, 3 tbsp

PREP. TIME: 20 MIN | COOK TIME: 20 MINS | SERVES: 3


DIRECTIONS You are going to LOVE this. Preheat the oven to 400. Boil water for pasta. Start by cutting a slit down the chicken breast to open it up. Trying not to cut all the way through, if you do no worries, just continue on! Fill each chicken breast with tomato sauce, the little pepperoni slices (use your judgment, if they are bigger slices use less, we want this to be a healthy ish dish), mozza, fresh basil & sliced pineapple. Drizzle olive oil over both the chicken breasts, and sprinkle with paprika, oregano, salt & pepper. Rub in. Set a cast iron pan (or oven safe pan) on medium/high heat. Once hot add the stuffed chicken breasts to the pan, top side up. And let sear for about 3 or 4 minutes. Once it’s nice and golden, flip and set the pan into the preheated oven. Bake for 20 minutes. Or until the internal temperature of chicken reaches 165. While the chicken cooks, cook the pasta and make the sauce. To make the sauce, put a large saucepan on medium heat. Once hot, add vodka and let cook for 30 seconds. Add tomato sauce, bring to a simmer then slowly add half & half cream (it may curdle but this doesn’t affect anything). Once noodles are done, add to sauce, mix and divide into 3 meals. Divide chicken into 3, and top pasta. Top with parmesan.
